Solaire rolls out mega brunch feast on 15 March

Solaire Resort Entertainment City is set to stage its largest brunch collaboration yet with the launch of “Mega Brunch” on 15 March, bringing together five signature restaurants for a one-day-only dining experience.

Scheduled from 11:30 a.m. to 3:30 p.m., the all-inclusive brunch will feature curated offerings from Finestra, Red Lantern, Oasis, Fresh and Waterside in a shared space at the resort’s lobby. Guests will also have the opportunity to meet the chefs behind each concept.

The culinary spread begins at the Caviar and Oyster Station, where freshly shucked oysters will be served with pink peppercorn mignonette, lemongrass velouté, citrus wedges and horseradish. The caviar selection includes Beluga, Ossetra, salmon roe, tobiko and bottarga, accompanied by classic garnishes such as chopped egg yolk and white, chives, blinis, sour cream, lemon and shallots.

Guests will be welcomed with a glass of Prosecco before exploring themed stations across the lobby, each featuring live preparations and specialty dishes.

At Finestra, diners can enjoy Lasagna Bolognese, Seabass Acqua Pazza, Ossobuco, Pork Milanese and Risotto ai Funghi, along with a live Carbonara station prepared tableside. The Pizza Bar will serve Margherita, Ai Funghi, Diavola, Capricciosa, Quattro Formaggi and Salmone Affumicato.

Waterside will present a Western carving station headlined by Giant Wagyu Smashed Burgers, a two-meter Solaire Hotdog, Slow-Cooked Beef Prime Rib and Boneless Herb-Crusted Lamb Saddle.

Red Lantern’s lineup includes dim sum favorites such as siomai, hakaw, char siu bao, xiao long bao, baked pork buns, spring rolls and deep-fried wontons. A live station will feature Peking Duck Bao and stir-fried noodles with wagyu beef.

Seafood takes center stage at Fresh, with prawns, king crab, Boston lobster, scallops, mussels, clams, curacha, swimmer crab, baby calamari, squid and octopus. A Raw Fish Bar will offer tuna, salmon, seabass, king fish, barramundi and hamachi prepared as sashimi, tartare, ceviche, tiradito and yuzu kosho specialties, alongside a Grilled Seafood Bar.

For dessert, Oasis will unveil a six-foot donut wall with assorted flavors including cookies and cream, Biscoff, chocolate sprinkle, coconut, pistachio and brownie. Guests can also create their own bingsu and choose from sweets such as vanilla panna cotta, rum baba, Solaire chocolate cake, mango chiffon, New York and Basque cheesecakes, tiramisu, honey cake, vanilla millefeuille, cannelé de Bordeaux and éclairs.

The resort said Mega Brunch is designed as more than a buffet, with live culinary stations, interactive elements and free-flowing beverages aimed at creating a lively weekend gathering space for families and friends.
