  • Bluewater Maribago Beach Resort has reopened its signature Allegro Restaurant, unveiling a redesigned dining space and a refreshed menu that highlights Filipino cuisine as the resort celebrates its 37th anniversary.

    The renovated restaurant features a brighter, more spacious interior designed to maximize natural light and island breezes, complemented by a refreshed lagoon-style pool surrounded by tropical gardens and balete trees. Bluewater said the redesigned venue is intended to provide a more inviting setting for celebrations, family gatherings and other occasions.

    Beyond the new look, Allegro has introduced an updated culinary experience centered on Filipino flavors under Bluewater's Amuma philosophy, the resort's tradition of heartfelt care and hospitality. The menu features regional specialties, seasonal harvests and classic Filipino dishes prepared with contemporary touches while preserving their traditional character.

    Among the featured dishes are Manok Bisaya Tinola, Pinalutong na Tadyang Kare-Kare, Garlic Butter Baby Squid, Bagnet Binagoongan and Shrimp Asado Cuapao, alongside Filipino desserts such as Cassava Turon, Cabcab with Latik, Pandesal with Ube Jam, and a live Halo-Halo station.

    The resort said many of the ingredients are sourced from local farmers, fishermen and artisans, reflecting its commitment to supporting local communities while showcasing Philippine harvests.

    "For us, Amuma is more than hospitality — it's how we cook," said Chef Gerwin Bailon, executive chef of Bluewater Maribago. "It means preparing every meal with respect for our ingredients, our traditions, and the people we welcome to our table."

    Bluewater said Allegro has served as a venue for family milestones and reunions for nearly four decades, and the reopening reflects its continuing commitment to delivering meaningful guest experiences through Filipino cuisine, thoughtful design and hospitality rooted in Amuma.
