Dessert of The Week: Triple Layer Chocolate Mousse
This chocolate mousse cake gives chocoholics a new reason to celebrate. It offers a rich triple-layer temptation of
chocolatey-ness — bittersweet chocolate, milk chocolate and white chocolate.
Each mousse layer of this enticing treat is ganache made with melted chocolate and heavy cream that's smooth and easy on the palate. It's decked with a drizzle of tempered dark chocolate.
To ensure the stability of the cake, shares 26-year-old Colleen Drew Bautista of Cody's Bakery, each layer has a gelatin powder. This will enable the cake to remain firm and not melt easily.

"This cake is made for those people who are not into super chocolate-y cakes because this gives a perfect balance of sweetness. Our customers can attest to the level of sweetness this gives. It's an indulgent treat without giving the "umay" feeling," she says.
Bautista opened Cody's Bakery during the peak of the pandemic. She started selling cookies at first, but eventually, expanded the menu offering different pastries, such as carrot bread, banana bread, tarts and mousse cakes.

"What I find most fulfilling being in the food business is the ability to serve people and being a part of their celebration whether big or small," says Bautista. "Food brings togetherness. Food is something that most people look forward to in every occasion and we've been given such privilege to bring joy to the customers we serve through our products."
