Chef Zor Tan on Michelin recognition, staying authentic to his roots

Solaire Resort Entertainment City’s Red Lantern will feature Michelin-starred Chef Zor Tan in a special three-night dining event from 14 to 16 November at 6:30 p.m.

The Singapore-based chef, who leads Born, ranked no. 25 in Asia’s 50 Best Restaurants 2024, will present a six-course menu that draws on his Hokkien heritage and international culinary experience. Known for his contemporary approach to Asian flavors, Tan’s cuisine bridges tradition and innovation through refined craftsmanship and storytelling.

“When I create a dish, I hope to connect to the guest like a childhood memory,” Tan told DAILY TRIBUNE. “In Southeast Asia, people eat Chinese food, Western food — at the end of the day, it’s all the same. It’s food, it connects everyone together.”

The Red Lantern menu highlights his “Circle of Life” philosophy, where each dish represents a moment from his personal or professional journey. Featured courses include Kanpachi with Ginger and Watermelon Radish, Bao with Wagyu and Oyster, Abalone with Chicken Fat and Jade Fungus, King Crab with Fish Maw and Talangka Rice, A5 Wagyu with Soubise and Maitake, and his signature dessert, Sweet Potato, Sea Salt and Oolong.

Tan emphasized that taste remains at the core of his craft: “By the end, it has to taste good,” he said.

Speaking about his Michelin recognition, Tan noted, “As chefs, we love Michelin. It doesn’t matter if you get one star or two — it brings food lovers from all around the world. It’s not only about food, but about attracting people who love the culture, the ingredients, and the beautiful people behind it.”

Looking ahead, Tan said he remains focused on growth: “There’s a lot of things I want to do. I want to make our team stronger so we can move on to the next level.”
