Discovery Primea's Flame Restaurant will bring together Executive Chef Luis Chikiamco and Chef Cyrille Soenen, Technical Director of Le Cordon Bleu Ateneo de Manila, for a special dining event celebrating French culinary traditions on 28 July.
Dubbed HÉRITAGE, the latest installment of Flame's Elements of Flavor series reunites Chikiamco with Soenen, who mentored him early in his culinary career.
The multi-course dinner will also feature Le Cordon Bleu Ateneo de Manila faculty members Chef Julien Bispo, a pastry chef, and Chef Régis Doré, a master baker. The three French chefs bring experience from Michelin-starred restaurants, luxury hospitality, culinary competitions and culinary education.
"So many of the values we share in the kitchen revolve around respect for technique, appreciation for quality ingredients, and creating meals that bring people together," Chikiamco said.
Soenen, the Philippines' only member of the Maîtres Cuisiniers de France, said the collaboration highlights the importance of preserving classical culinary techniques while adapting them for modern diners.
"Heritage is more than preserving recipes. It is about preserving techniques, craftsmanship and respect for the ingredients while creating something meaningful for today's guests," he said.
The dinner menu features Pulutan à la Prince Albert, Lobster Salad Remoulade, Crispy Korean Chicken "Oyster," Halibut Viennoise, Kurobuta Pork Sando, Pigeon Tourte, Trio Sorbet, Chocolate Tiramisu Tart, and Petit Fours, with wine pairings curated by Premium Wine Exchange.
HÉRITAGE will be held at Flame Restaurant in Discovery Primea on July 28, with dinner seatings scheduled at 6:30 p.m., 7 p.m. and 8 p.m.
The event is part of Discovery Primea's Elements of Flavor series, which features collaborations with accomplished chefs to showcase culinary craftsmanship and exclusive dining experiences.
