Guevarra’s by Laudico is serving up something special this May as it welcomes a homecoming collaboration with Melbourne-based Filipino chefs Michael Pastrana and Morris Danzen Catanghal — better known as The Adobros.

The duo, known in Australia for their modern supper clubs celebrating Filipino cuisine, has teamed up with Chef Roland Laudico for Taste the Philippines: A Global Culinary Journey, a buffet series in May and June highlighting reimagined Filipino dishes.

At Guevarra’s, The Adobros showcase their signature blend of heritage and innovation. Highlights from the buffet include Tinola sa Gata, with chicken meatballs simmered in coconut milk; Chicken Afritada Croquettes with a harissa kick and pea purée; and a standout Adobong Pusit Valenciana — a squid ink rice dish layered with adobo’s deep, tangy flavor. Their Lamb Adobo nods to Australian ingredients while staying true to Filipino roots.

These additions join Guevarra’s signature dishes already loved by regulars, including a rich, tripe-heavy kare-kare and the beloved bacon bagnet — shatteringly crisp pork belly paired with spiced vinegar. Together, they form a buffet lineup that balances classic flavors with bold new takes.

Set inside a heritage home in San Juan, Guevarra’s is known for its hearty take on Filipino comfort food. This collaboration adds fresh, globally-informed dishes to the mix — a celebration of how Filipino cuisine continues to evolve without losing its soul.
