Samurai-inspired restaurant puts a twist on Japanese classics

Nobu-trained chef Chris Oronce is at the helm of a new Japanese restaurant in Bonifacio Global City.

Oronce said he designed the restaurant for young families, especially fathers and sons who grew up watching anime, reading manga, and for every Japanophile on the hunt for new restaurants.

Saigosan, developed by the Red Crab group of restaurants, should appeal to anime lovers — or those with a taste for the modern and imaginative.

Walking into the restaurant feels like a dream sequence with anime-inspired interiors looking like a cross between a Shinkansen (bullet train) and a ramen shop. Bright lights and neon signs stand out from the outside, catching the attention of passersby.

The restaurant is named after "one of the most influential samurai in Japanese history and one of three great nobles who led the Meiji Restoration," according to a Japanese illustrated book.

Saigosan offers a modern take on classic Japanese hits that Filipinos have loved for generations. Along with favorites ebi tempura, sashimi platter, gyoza, and spicy salmon roll, guests may try the Saigosan specials including California rolls in the form of mini volcano rolls, truffle Wagyu steak macaroni, grilled teriyaki burger, and even roast beef sukiyaki. They also have ramen and a selection of desserts.
