Half Irish and half Ilocano, I spent 20 years in New York as a director for 24 Seven Inc. in the creative and beauty industries, specializing in business development, HR and strategic consulting. After returning to the Philippines to support the family business, I settled in La Union, where my son’s growing love for surfing deepened our bond and sparked my journey to the breathtaking surf town of Baler. Surrounded by the majestic Sierra Madre, waterfalls and raw coastal beauty, I felt called to open Valero Tinuno — a restaurant named after my middle name, honoring Baler’s rich roots. As a proud mother, entrepreneur and nature lover, discovering the Philippines has become a passion and a path to empowerment, connection and purpose.

One of my favorite places to shop in Baler is the local market — it’s where the heart of the town really shines. I love picking up fresh vegetables, their unique local vinegar and, honestly, the coconuts here are some of the best I’ve had in the country. It’s simple, fresh and full of flavor — just like Baler itself.
