Drawing inspiration from his travels to Greece, this time around he spotlights the cooking traditions from the Northern region and explored time-honored approach to longevity and well-being. A gastronomic treasure away from the maddening city of Manila — Elaia by Cyma. The name Elaia, meaning “olive” in Greek (pronounced Eh-le-yah), symbolizes the commitment of using only the finest extra virgin olive oil — infusing every dish with authentic Mediterranean flavors. The special intimate launch of Elaia by Cyma was a celebration of excellent Mediterranean cuisine that prides on local sourcing and has deep respect for heritage in every dish. Where slow cooking is the only way to create great food which takes time. The successful gathering was a testame in feasting on traditional dishes that embodies comfort, tradition and love for home-cooking.  An homage of chef Robby to a grandmother who gave him one of the most unforgettable gastronomic experience in his life — a memory to last a lifetime.
