Along with other popular food and drink places in Poblacion, in Makati City, then three-year-old Polilya closed its doors at the height of the pandemic, in July 2020.

Recently, its founders at Dark Wing, Inc. reopened the well-loved party hub as part of its aim to continue leading the industry with "new and original concepts that take the best from our world travels and using them to elevate the overall experience of the guests we serve."

Polilya's return to the Poblacion scene marks the resurgence of Dark Wing, established by Alex Colombo, Nina Paradies and Ian Paradies.

Colombo was doing academic research in a lab in the United States before moving back to the Philippines to work in marketing and IT with Nina.

Prior to starting the company with her family, New York-educated Nina she worked in sales and marketing in Manila and went on to create a small fashion brand called FINI with two close friends. More recently, she launched a small furniture business with her husband in Siargao Island, Philippines.

Ian, meanwhile, is the founder and president of Napa Gapa Beverages Corp. and co-founder and President of Dark Wing Inc.

Revamped and updated but with the same quality and inviting comfort that made it such a success, Polilya is a must-visit for its classic cocktails mixed with an all-new
Pinoy-inspired bar chow menu.
