Mother’s Day is coming up. This year, it comes early because the second Sunday of May falls on 9 May, and pandemic or no pandemic, the special occasion must be celebrated and the queen of the household must be honored. The celebration depends on the lockdown classification of the “National Capital Region (NCR) Plus” bubble at that time, but definitely the sweet treat for mom will take place. Order it for pick-up or order it for delivery. It is very convenient now.

Here are some of the special sweet treats available for Mother’s Day this year:

Limited-edition cake
Flour Pot Rum Cakes Manila has come up with a special limited-edition cake for Mother’s Day — the Mediterranean orange cake. It’s a beautiful naked cake, which chef Rhea Castro SyCip is known for, crowned by fresh tulip, carnation and statice flowers. It tastes as good as it looks.

Cakes by Gel Salonga’s Strawberries and Cream Doughnuts.

“It’s so hot and humid and we wanted to create a cake for Mother’s Day that is refreshing and light,” says chef Rhea, whose husband, chef Jayjay SyCip, has been asking for an orange cake for the longest time.

This Mother’s Day, she fulfills his wish with the Mediterranean orange cake’s layers of light chiffon flavored with Valencia oranges and enhanced by brushing the layers with citrus orange peel soak. She made some candied oranges and folded them into her Moroccan orange blossom buttercream icing, to which she also added walnuts. For the topping, chef Rhea splashes some lavender extra-virgin olive oil and whisked it briskly with buttercream icing. Voila! A beautiful and delicious Mother’s Day cake.

It comes in three forms — Classic Cake, with no flowers, just candied oranges on top, for P2,250; Nine-inch Cake with floral bouquet of carnations, eucalyptus and statice flowers for P2,700; and Premium Cake, with basic floral arrangement with the addition of Holland tulip, Australian eryngium flowers, and Australian wax flowers, for P3,700.

Cake in a pan
Another busy as a bee chef mom this Mother’s Day is chef Jackie Ang Po, whose Fleur de Lys Patisserie along Tomas Morato Avenue, Quezon City, is always a go-to place for delicious cakes on special occasions.

For Mother’s Day this year, chef Jackie offers Strawberry Shortcake in a large aluminum pan that is good for 12 persons. Priced at P1,580 per pan, it is layers of light chiffon cake with vanilla Chantilly cream and fresh strawberries. Box of doughnuts
Gel Salonga-Datu, a very talented pastry chef who comes up with the best original cake ideas all the time, is going towards the direction of comfort food for Mother’s Day this year. She opts for doughnuts, but, mind you, not any ordinary doughnut but premium strawberry doughnuts — the Strawberries and Cream Doughnuts. It’s a combination of luscious cream and the sweetest strawberries, encased in a pillow soft doughnut. Simply delicious!

For Mother’s Day, she offers them in boxes of six at P550 per box. To make sure the doughnuts are at their freshest best, Chef Gel is asking for three days’ lead time for orders. Orders may be placed via Gel’s Instagram account (@baker_gel_salonga) or Facebook page (@cakesbygelsalonga).

Forget Me Not Specialty Cakes’ Pastel de Amor Cake.

While most bakers go for modern cake trends, chef Pixie Sevilla of Forget Me Not Specialty Cakes banks on her classic Pastel de Amor cake, which she dressed up perfectly for Mother’s Day. It is a square-shaped chiffon cake with her secret Brazo de Remedios filling and covered with traditional boiled icing. Specially designed with piped flowers and leaves for Mother’s Day, it comes in four sizes — six-by-six (P325), eight-by-eight (P620), 10-by-10 (P975) and 12-by-12 (P1,100).

Bellefleur by Beatrix’s Strawberry Shortcake.

Strawberry power!
From Bellefleur by Beatrix comes a beautiful, limited-edition strawberry shortcake in an aluminum pan. Instead of a regular chiffon cake, Bellefleur by Beatrix opted for an Angel Food Cake base, which is made with butter or oil and is as light as feather. The frosting is made of whipped cream with sliced Baguio-grown strawberries folded in for added texture and body. The cake is topped generously with slices of strawberries.

The limited-edition eight-inch round cake is available until mid-May at P1,800. Bellefleur by Beatrix has a brick-and-mortar store at Unimart Greenhills, Club Filipino Avenue, San Juan City.
