Healthy and filling empanada

Travelers to the northern part of the Philippines, specifically Ilocos, shouldn’t miss savoring its famous delicacy, empanada, when they’re in the area. Of course, if travel is still not doable, we can always create this hearty and savory pastry in our kitchen. Here’s a quick but delicious recipe from our favorite cookbook author Liberato P. Fernandez.

Tara, magluto ta ug kaon.

Empanada
Ingredients:

4 cups oil
2 potatoes
1 head garlic, chopped
1 onion, chopped
1/4 cup lean ground pork
1/2 cup raisins
1/2 cup olives
3/4 to 1 tsp salt
pepper to taste
2 boiled eggs

For the wrapper:
4 cups flour
1/2 cup sugar
1 bar softened butter, cubed
4 egg yolks
3/4 to 1 cup water

Procedure:
1. Slice the potatoes into cubes and fry. Set aside.

2. Saute garlic, onion and ground pork. Add raisins, olives, salt, pepper, potatoes and sliced eggs.

3. To create the wrapper, mix flour, sugar, butter, egg yolks and water. Then knead.

4. Cut the dough and sprinkle flour on the table. Wrap the empanada and fry.
