Waterside, the Latin-inspired dining destination at Solaire Resort Entertainment City, is turning up the heat with its latest culinary offering, Latin Nights, a celebration of Latin American flavors, music, and culture.
Dubbed a fiesta of flavors, Latin Nights invites diners to experience the richness of Latin cuisine through a curated buffet that blends comforting classics, smoky grilled meats, and vibrant regional dishes. Guests are welcomed with signature cocktails such as a Mojito, Caipirinha, or Piña Colada, each infused with a modern twist to set the tone for the evening.
The culinary experience is led by Chef Sherwin Reyes, whose menu showcases the diversity of Latin American gastronomy. Starters include Seabass Tiradillo, inspired by coastal Latin traditions, featuring fresh fish lightly cured with citrus and herbs. The spread is complemented by a selection of charcuterie, including bresaola, salami Milano, and prosciutto, alongside artisanal cheeses such as Gorgonzola, Parmesan, and Brie.
Interactive elements add to the festive atmosphere, with a roving nachos trolley serving freshly made guacamole ahead of the main courses. Guests can indulge in premium roasted meats and hearty specialties such as Bourbon barbecue pork ribs, chimichurri chicken, herb-crusted lamb rack, and salt-crusted baked salmon.
The buffet also highlights traditional Latin dishes including pastel de fideo, the Andean corn delicacy humintas, and arroz con queso, a creamy rice dish enjoyed across the Andes. Each offering reflects Reyes’ approach to balancing bold flavors, seasonal ingredients, and refined presentation, evoking the warmth and generosity associated with Latin celebrations.
Desserts round out the experience with classics such as tres leches cake, rice pudding, and churros served with rich chocolate dip.
Latin Nights runs every Thursday to Saturday, from 5 p.m. to 11:30 p.m., at Waterside until 30 March 2026.
