Sakizuke, Yamazato’s Kaiseki Ryori’s first course.
Kaiseki Ryori is a classic and cultured dining experience served in beautifully presented courses that only specialty restaurants can truly achieve. At Resorts World Manila (RWM), the Michelin-recognized Japanese restaurant Yamazato brings this pinnacle of Japanese sophistication and culinary art to the country as it holds its soft opening this December at the soon-to-open Okura Hotel Manila in RWM’s Grand Wing.
For the unfamiliar who wants to immerse on the gastronomically delightful tradition, Yamazato’s kaiseki ryori comprises seasonal ingredients sourced fresh from Japanese markets and served in multiple sequences.
Kaiseki ryori also goes well with choice sake which is available in Yamazato’s wide selection of rice wine spirits and other alcohol.
Sakizuke, bite-sized starters similar to French amuse-bouche, opens the culinary feast followed by a seasonal soup and slices of sashimi. Grilled dishes of either fish or meat are then served followed by a tasty serving of nimono, simmered in savory seasonings. Once the palate has been stirred with flavorful courses, a rice meal called oshokuji and kō no mono or pickled vegetables are served for a truly hearty penultimate course.
Yamazato’s kaiseki ryouri then culminates with a seasonal dessert called mizumono to further enhance and balance the meal experience.
Kaiseki ryori also goes well with choice sake which is available in Yamazato’s wide selection of rice wine spirits and other alcohol.
For more delectable sets of authentic Japanese cuisine, guests may also try Yamazato’s seasonal bento selections featuring seasonal appetizers; sashimi; grilled, simmered and/or fried dish; rice set or noodles; soup; pickles; and special dessert. To maintain high quality and freshness, Yamazato’s bento selections will highly depend on the seasonality and market availability of the ingredients.
According to chef Mouri who has 33 years of Japanese culinary experience, “Japanese cuisine is beautiful to the eyes. Most of the items on the plate are edible, including edible flowers and sprouts.
They are carefully selected and cut. Not only is it delightful to look at, but its taste enhances the charm of the main ingredients or serves as refreshment.”
